As a keen forager, Justin enjoys exploring the great outdoors for simplistic, original dishes made up of native herbs, pine mushrooms and whatever else he stumbles upon. Pickling and preserving is another one of Justin’s passions and when he’s not catering for events, you’ll find him working on his other empire - Drunken Sailor Jams. The hugely popular jams and relishes are a favourite among the Sydney cafe scene and are addictively delicious.
